Victory Straight Filleting Knife 22cm
These Victory knives look a lot like many other commercial knives, like Dexter knives and Victorian knives. However, they feel much different in the hand, stiff and flexible with backbone at the same time. I suspect these qualities stem from Victory’s tempering and quenching process of the knife steel. I used this knife on a 20 pound, 34 inch red snapper the other day. I was very pleased. I would reach for this knife anytime cleaning a fish heavier than 15 pounds.
